If you're a stuffed pepper addict, we feel you. Peppers are quite possibly the perfect foundation for a scrumptious snack or even a hearty meal. In addition to the beef, rice, cheese or whatever yummy ingredients they're stuffed with, bell peppers also serve up plenty of antioxidants, anti-inflammatories and are chock full of vitamins C, A and E. Plus, with only 45 calories per cup, they're a diet-friendly choice (as long as you choose sensible stuffers, of course).

Using stuffed peppers as a container also makes it easier to sneak in extra servings of veggies, especially helpful when feeding picky kiddos. You can even provide a pepper-stuffing bar where everyone can pick and choose their fillings and enjoy their own custom creations.

If this delicious food is on your regular rotation, you might be wondering what to serve with stuffed peppers to add variety to your meals without sabotaging your goals. Try incorporating some of these scrumptious side dishes next time you enjoy your favorite pepper.

Some of our SparkPeople members shared their favorite ideas for stuffed pepper side dishes:

"When my mom made stuffed peppers, she always made boiled potatoes with them ([along with] lots of sauce as we have them the Hungarian way--boiled in tomato juice, not baked). When I make them now, I serve them with a side salad and a cooked veggie. (Or) make it as a soup in [your] Crockpot ([using] chopped peppers instead of stuffed) and add rice to [your] bowl instead of to meat." STAMPINGADDICT

"I have always had mine with potatoes. My mom would either make mashed or fried. The potatoes are good to sop up the yummy sauce." - HEALTHYAMY

"I served it with small garlic roasted potatoes and roasted sweet red pepper with a creamy white wine and mustard sauce...not on my diet, but was worth every calorie." - BARBAKOAR
