Roasted Vege Salad

Preheat oven to 425 degrees. Spray pan lightly with olive oil to prevent sticking. Cut bite size pieces of favorite veges and spread on pan. I like asparagus, green beans, beets, yellow squash, zucchini, mushrooms, red onions, garlic cloves and eggplant. Spray veges lightly with olive oil if desired. Bake about 20mins. Add veges to a bed of your favorite greens. Then for the fresh taste I like, I add cut green onions and chopped cilantro. Top all that with avocado chunks and toasted sesame seeds and you'll have an amazing tasting and good for you filling meal. Enjoy!
