Sweet Potato Totchos

I tried a recipe from The Farm Stand collection. The link above is to Sweet Potato Totchos. It's a play on nachos and loaded with toppings, replacing the base of nacho chips with tots. It reminded me of a taco salad because I added a generous amount of Romaine (instead of using bagged shredded lettuce).
This is the first time I tried Alexia bite-size sweet potato tots. The sweet potato tots were prepared in the oven according to package directions. They were crispy on the outside, soft on the inside. A little of these sweet gems goes a long way!
I substituted a packet of taco seasoning instead of making my own blend.
Put a layer of tots on each plate, then lettuce, taco meat, tomatoes, jalapeños, black beans, green onion, and cheddar cheese. I topped mine with a small amount of salsa and sour cream.
My family said it was delicious and filling.
You can substitute what you like in a recipe like this. I'm already thinking green pepper and corn. Make it as healthy as you want, or add some extras if you have the calories.
