We love regular green bean casserole, but it gets fatty, heavy, and salty. I found a recipe for a green bean and onion dish that we like really well, and if we miss the french fried onions, well, we just sprinkle some on top. I saute some nice green beans in EVOO until they're tender crisp, then add some thinly sliced onion rings, your choice of onion, and some chopped mushrooms, also your choice. When the onions are transparent, drizzle in a mixture of EVOO or your choice of what you use for butter, melted with several drops of Worcestershire sauce (to your taste.) When the sizzle stops, platter and serve.
Along these lines, I opened the following recipe moments before I opened this tab, so here it is. I haven't tried it, but how bad could it be... :-)

2 tablespoons butter
1 yellow onion, diced
3 garlic cloves, minced
8 ounces cremini mushrooms, sliced
2 sprigs fresh thyme
salt and fresh ground pepper, to taste
2 tablespoons all-purpose flour
2 cups low sodium vegetable broth, (you can also use chicken broth)
1/2 cup half and half
1/8 teaspoon ground nutmeg
1 1/2 pounds frozen green beans, thawed and drained
FOR THE ONION TOPPING, use 3/4 cup french fried onions
Preheat oven to 375F.
Melt butter in a large skillet or dutch oven over medium heat.
Add onions and cook for 4 minutes, or until softened.
Stir in garlic and continue to cook for 1 minute.
Add mushrooms and season with salt and pepper, and stir in thyme sprigs; sauté for 8 minutes, or until liquid has evaporated.
Sprinkle with flour; cook and stir for 1 minute.
In a mixing bowl, whisk together broth, half and half, and nutmeg.
Add the half and half mixture to the skillet; bring to a boil, then reduce heat to medium low and simmer for 5 minutes, or until thickened.
Add green beans to the mushroom sauce and cook for 8 to 10 minutes, or until green beans are tender.
Transfer everything to a 4-quart baking dish and bake for 20 to 25 minutes, or until bubbly.
Add fried onions on top and continue to bake for 5 more minutes, or until browned on top.

Remove from oven and let stand 5 minutes.
