I have a mixed veggie soup, though you can add stewed pork to it for extra flavor.

I don't have exact calorie counts or breakdown, but it's one I love and personally, I don't think it's ethnic, but I've only seen this version in Chinese restaurants.

I don't have a name for it either, but it's tasty and delicious. Plus, you can modify with different ingredients, but I like this specific mix.

Ingredients:
4 carrots
3 tomatoes
2 potatoes
1 onion
1 can chicken/vegetable stock (optional)
(you can change the amounts of the ingredients depending on what you prefer - can add cabbage to recipe)

1. Chop up all vegetables.
2. Put the vegetables in a large pot. Fill the pot with water or stock until it just covers the vegetables.
3. Heat on high until water boils and reduce to a simmer on low heat for 30 minutes to an hour (or more). Check if all the vegetables are cooked and serve.

That's it! Simple, easy, and delicious.
