Some Cuban friends gave me a recipe years ago...I don't have it handy, but it was basically the same as all Latin bean-and-rice recipes, except that the white rice had sliced green onions and rice vinegar in it.

I have lived/traveled all over Latin America (though I have never been to Cuba) and I generally make a sofrito (onions, garlic, tomatoes, a couple of hot peppers, cilantro and a couple of t of ground cumin), add canned black beans and serve over rice garnished with lime. It is very simple.

Dances: salsa (standard/LA), casino, rueda de casino, cumbia Colombiana, cumba Mexicana, bachata, mambo, cha-cha-chá, merengue, reggaetón.

Dances to Learn in the future: flamenco, tango Argentino, samba, belly dancing, bhangra, danzón, Cuban rumba, ballroom rumba

It will take longer to cook if you don't have a pressure cooker. Also, always discard the soaking water and rinse the beans again before cooking. The soaking water contains lots of dirt and debris. You don't want that in the food you eat.

This isn't authentic anything, it's my twist on a Mennonite missionary twist (via the More with Less cookbook) on a classic Brazilian dish called feijoado. It is quick, easy, and delicious.

I start by dicing about 1/2 lb of bacon and fry it up. Then in a bit of the bacon fat I saute a diced onion and whatever peppers or celery I have on hand. While this is going on I start a pot of rice cooking. When the rice is nearly done I gently stir in 1 or 2 cans of black beans, drained. Season with hot sauce and maybe some cumin. Stir in the onion stuff and the bacon bits and it's ready to serve.

This needs to be served with some dark, slightly bitter greens (steamed spinach or whatever), if you don't have dark cooking greens you can serve shredded Romaine lettuce instead. Also, with sliced oranges. You eat a bit of all together so you get the contrast of sweet, bitter, salty, and hot--yum.

(If you're vegetarian or really watching your cholesterol you can omit the bacon and saute in a bit of oil. In this case you'll need to add salt too.)

okay, my husband just mentioned to me that he might be interested in rice and black beans. so does anyone know of a good authentic cuban recipe for this? and anything to go with it? I have absolutely no info on cuban food at all.

any ideas?
