I believe it is just going to be me and Dad, a nice small gathering. His ladyfriend is off (presumably, since she had to go through snow-laden London) to Kenya to visit with her son who is currently working there. She indicated he'd gotten wild game for Christmas dinner. He likes to cook and he really wants to make the meal. We just need to keep his hand not so heavy on the oils... OR the salt! He's gotten to the age where his tastebuds aren't what they used to be, so he adds salt, lots of it.

He knows I am low-carbing so I don't expect he will push dessert. He's not a big dessert eater himself; just here and there.

My guess is that Christmas Eve will be seafood. He loves the entire concept of the Italian nine or is it seven types of fish to be served?

I will be cooking/prepping some meals (and some dishes at meals) while down there; and I will make all of my own breakfasts. I just have to worry about his notion of portion control. There will be a lot of healthy salads during my stay over the holidays.

Working on healthy: Nutritious, sustainable, day to day, low carb-ish living. AND getting out and about and exercising... Yep, better do that!

I'm making roast beef, Yorkshire pudding, colcannon (mashed potatoes and sauteed kale) and hot rolls (I'm going to cheat a bit and use brown-and-serve rolls). This will all be washed down with a nice California shiraz. No dessert -- my two "guests" are my ex and my son. Ex is diabetic and my son is on a feeding tube due to his disability.
