I'm doing up some chicken leg-quarters for tonight when I'll make some Mexican rice (has some pea and carrot in it even), black bean refried and we'll eat a green salad with Caesar Dressing just to keep things South of the border. You did know Caesar Salad was invented in Mexico, right?

Have fun with your food, you can always lose weight but it is hard to take back all the dull, boring, and negative days. We don't need any more skinny mad-people running around.

I'm not even near perfect, but I know someone who is.

This week, I made White Bean Chicken Chili,: super easy, inexpensive meal. The recipe serves about 8, which means the cost of each serving is a little over $1 per serving. Chili freezes well, so it makes for good leftovers or weekday lunches.

Thanks for the link, as well as introducing me to a new website for recipes.

Here's my General Tsao's sauce recipe I plan on using with that recipe:

1/2 cup cornstarch
1/4 cup water
3/4 cup molasses
1/2 cup hot chicken bouillion
1/2 tsp garlic powder
3/4 tsp ground ginger powder
1/4 cup soy sauce
1/4 cup white vinegar
to taste: red chile powder (CHILE pwdr = true pepper, but CHILI pwdr has extra ingredients)

Directions
Smooth cornstarch in water.
Mix hot bouillion with molasses.
Combine and stir in the rest of ingredients.
Stores in fridge.

I have thrown in some wedges of red potatoes (about 2 pounds), onion, oregano, salt, pepper and butter. Leave on HIGH 4 hours. Serve on a platter with sprinkled Parmesan.

Easy, cheap & nutritious!

I love using my crockpot. Today is Honey Mustard Chicken, tomorrow I will use the last two breasts from the six pack I bought. I'll put them in the crockpot to cook them, then shred them up for enchiladas, but those will go in the oven.
I made the mistake of trying crockpot fajitas once, the veggies just turn out super soggy though, it was terrible.

I had tons of onions in the fridge that I was not about to let rot...so I have the crockpot fired up with french onion soup! yum...BUT...it takes atleast 7 hours to cook! One housemate hates onions and the other doesn't want soup. So, fine with me to have it all! I will simply place in storage containers and have for a couple of days. To top things off, barely, if any, calories!

Either boneless skinless chicken breast or bake potatoes... I don't like chicken, tired of potatoes. But I am thinking frugalness... For a little luxury, I can use spaghetti sauce on either, vegetables on either, etc. I will use the crockpot for either one.
