Today I cooked Stuffed Pork chops for dinner, something neither one of us has ever had. They had a pine nut stuffing in them and were interesting and delish.

Several new things tried recently, I just haven't posted.

1) My boyfriend's favorite cookie is oatmeal. I usually put raisins in them, but I didn't have any. The local small store I ran to didn't have any either, but they had cranberries, so I bought those and put them in. YUMMY! I found out after that he doesn't actually like raisins, but LOVES cranberries, so, extra points for me!

2) Hommus - everyone raves about hommus, so I thought I'd give it a try when I saw it at my local produce market. The only kind they had was flavored with artichoke and kalamata olive. I'm not fond of kalamata, but I bought it anyway. As I suspected, the olive flavor was icky, but I could still taste the artichoke, and if it weren't for the olives it would have been good. The BF liked it, as did my son though, so it didn't go to waste. I did like the texture and I think I will attempt to make my own, experimenting with different flavors. I'll let you know how that turns out.

3) My temper - I had a problem with my neighbor two floors down. Actually, she had a problem with me, but rather than come to me, she chose the playground route and went to another neighbor and the landlord. If her problem was based on fact, it could have turned out serious, but being that it had no factual basis whatsoever, it doubly ticked me off. I did leave a very nasty note on her door, but today was the first chance I've had to actually see her. What I really wanted to do was choke the crap out of her, but I held my temper and acted like an adult rather than the 5th grade playground mentality she displayed. I'm not sure whether I would have felt better choking her or not, but at least I didn't scream at her and remained calm while discussing it with her. THAT is a first with me.

I've reacted a lot calmer about a lot of things lately. Perhaps it's less sugar in my diet making me less hyper and prone to fly off the handle?

I probably could make it healthier, Paul, but why mess with perfection??

I do have a "Quick 'N Easy" lasagna recipe in my SP cookbook that is...well...quick and easy, as well as low cal and low fat. It's good, but not as good as my high cal full fat recipe! :-)

I used to only eat meat well done, but when I got pregnant, I became a cannibal and the bloodier the better. Now I',m settled in to a nice respectable medium.

Tip Steak needs to be rare or it gets tough, I'm still working on the spinach, as far as finding a way to get it into my diet without surrounding it with pizza or a dip.

The beer. Ahh yes. I am continually surprised that when I drink beer, it actually balances out my nutrition for the day. I had 6 the other day (shhh!) and it still didn't give me enough carbs to earn earn challenge points, and I thought I would go over, so I had almost none during the day. But the overall balance of nutrition ended up pretty good, LOL

There was a 2 oz Ball tip steak cooked medium rare, I have never eaten a steak that wasnt well done, it grossed me out, but this was the tenderest best tasting steak I think I have ever had... A small fillet of ling cod with a relish on it, I think it was like a plum relish, something fruity but very tasty.... I ate cooked spinach and glazed carrots which I would never eat before... I also drank an Alaskan ale that was one of the best beers I have ever tasted

I'm with you Tracy... it is all way too redundant! My new thing is last night I went to a travel trade show in Seattle. It was a presentation for the kickoff of Alaska's 50th birthday next year. They served some food that I would have never tried before, but I did and really enjoyed. And it was axtually a very healthy meal.

I'm not knocking your toy, I just think we're getting a bit ridiculaous is all. Redundant as well. Picture a business executive that travels often. Sure, he could use something like the ability to watch a movie while waiting at the airport. But does he need that ability on his laptop AND on his iPod AND on his cell phone? And chances are he has all three. Email the same. And music. He probably has an iPhone, potentially narrowing it down to just one device, however, I bet he still has at least two of the three.

I'm just complaining about the redundancy (and waste) of it all. I'm just as guilty about some things, so I'm not throwing stones at all. And the cost to the consumer?

i've just left an industry where I've seen instances where people had every toy and gadget imaginable, and having all of that, and maintaining it, was so important to them, that they were losing their homes, yet they chose the gadgets over their home.

Not that everybody, or even most people are in that position, but I could go on and on about similar examples.

I'd better step off of that particular soap box now.

Sure, those things are a good idea for some people I guess, and now that we have them, we can't live without them. I could do the same thing with my iPod, and do. But really Lynn, I think you would be more likely to either be listening to your iPod and dancing round the terminal, or sitting in a bar watching a movie (or football game)

But really, why would you want to watch movies on your phone? Makes no sense to me. All of this technology, just because you can. I would think that technology could be used to better ends than toys. Like finding cures for cancer and other diseases.

Technology is great, don't get me wrong, and I'm all over quite a bit of it, but some of what we have is just plain silly. That's just my opinion.

Sounds icky. Capers are good, but they wouldn't have changed the flavor of your recipe by much, if at all. I've never heard of that cheese before.

I haven't really tried much that is new, but that's no surprise, really! I did, however, buy a 4gb memory card for my new cell phone, so that's kinda new...I've never had a phone I could put a memory card into and play movies on! :-)

I'm still not getting out too much, so my new experiences are mostly food related...mostly :)

Yesterday I ate eggplant. I used a recipe that was not very spark-friendly, over 500 calories per serving. Considering it's a vegetable, (fruit?) that's pretty high. I really only ate half of the serving though.

The recipe was "Stuffed Eggplant". I had cut it in half lengthwise and scooped out the flesh and chopped it up. Cook the flesh in olive oil with garlic cloves, onion, and a bunch of other spices like basil, oregano, crushed red pepper. Then you mix it with bread crumbs and shredded cheese and stuff it all back into the shell. Top it with tomato slices and more shredded cheese, drizzle it with olive oil and bake.

I wish I could say I loved it, but I didn't hate it. I ate half of my serving which was better than Johnny did. He only ate a couple of bites before spitting it out and then pitching the rest of it, but if you want an example of a picky eater, he's it. It wasn't the taste, it was probably the consistency.

Even with the spices, it was bland. Also, very mushy in texture. I followed the recipe closely, but did have a few changes. It called for Gruyere cheese but I had Mozzarella, so used that instead. It also called for capers, but I didn't have any and neither did the store I stopped at. I've never had either of those, so I don't know how much it would have changed the flavor.

If I were to ever make it again, I would probably add more spices, especially red pepper, less bread crumbs, and maybe some mushrooms. It's possible that it wouldn't be bad if it were mixed with some meat like ground italian sausage or roast beef, but that would raise the calories considerably.

It was 509 calories per serving. Very likely from the cheese and the olive oil, 6 Tbsp total, but that could probably be lessened by not drizzling it over the top before baking. It really served no purpose that I could tell.

I probably won't ever try eggplant again, unless I can get the recipe for an appetizer dish I had tasted at our Christmas lunch which was to die for, but I only had one bite.

She's doing well...we were both a bit sore yesterday, but not nearly as sore as we thought we'd be once the day got going. I'm still a tad bit sore today, but she seemed fine...she's only 15 ya know?! :-) I did an hour of cardio at the gym Friday night, power walked 10 miles Sat. night (after working the Expo all day), and danced at Def Leppard last night....a weekend rich in cardio!

My new thing for yesterday was a very pleasant one... Tami doesn't cook very much, especially not something new. But last night she cooked the entire dinner, by herself, and it was absolutely yummy and I'm still alive today so she didn't poison me, LOLOLOL!

That's great. Adding somethng new to your routine keeps things fresh. Prevents your mind and your body from getting bored.

Not everybody is going to do something new EVERY day. That's kind of difficult. I have several things planned for this week though. As far as food, I'm going to try cooking and eating salmon, eggplant, doing something with an avocado besides making guacamole, and I'll try a papaya.

Activity wise, I'll have to see what comes up, if anything.

I have a new boy-toy, but that's not exactly a challenge, lol.

BuntingL, how was your passover experience?

Today I made homemade guacamole for the first time, and it was pretty good. Avocados are slippery little buggers when they are peeled aren't they? You would have had fun watching me wrestle with them since I have no feeling in my fingers.

I've only been eating guacamole for about a year. I tried a bite of the avocado before I mixed it, which was a first for me, just plain avocado. Not bad. I suppose I could eat it sliced on a salad or something.

This is not a new experience, but I hosted my first barbecue at my new place, and it was the first time I've seen my guests in 26 years.

You tried a new activity and went to a new place. Great!

I ate fish today. Real fish, not the processed sticks that are breaded and come in a box that I had in my childhood.

Clyde took me to the Dr., so I "bought" him lunch to repay him. I had a gift card to a Greek Restaurant in the area, so we went there. I decided that since I wasn't actually paying for it, well not much anyway, I would order the fish. That way if I didn't like it, it wasn't wasted money.

I don't remember the Greek title for the dish, but it was grilled Lake Superior Whitefish.

It was very flaky, so cooked perfectly I guess, however, there was no seasoning on it at all. I think they probably put a bit of olive oil on it to keep it from drying out, and a bit of Paprika, but that was it. I found it bland and tasteless, so I asked for some lemon (I was surprised it wasn't served with it). The lemon did nothing to liven it up, and neither did salt or pepper, so I broke down and asked for some tartar sauce or cocktail sauce.

The waiter responded in what seemed like a horrified manner that "We don't serve those sauces in OUR restaurant". Maybe that's why there was only two other tables of diners in the restaurant during lunch, in a town where it is an unwritten law that you MUST eat out every Friday and Saturday.

All they could offer me was Tzatsiki sauce (yogurt and cucumbers) which is great on a gyros, but absoutely horrible on fish.

So, the fish did nothing for me. I ate it though. It's low cal and good for you which is why I decided I needed to add it in my diet anyway. Real good thing on the low cal too, because who can go to a Greek Restaurant and not have Saganaki?

Okay, yesterday...trying to think of something new that I tried...oh, playing tether ball with one of my students. I didn't last long because it hurt my hand!

Today we went on a field trip to a state park that I had never been to. I walked two of the trails ( a total of roughly 2 miles, but they were STEEP!!!). The park and trails were new to me!

I've not tried them. I'm a Chicagoan, and it's only been within the last few years (okay, maybe more than a few, but not overly long) that they have been introducing "other" things onto pizza. I am still of the mindset that if it aint Sausage, Pepperoni, Mushrooms, Onions, Green Pepper or Olives, it don't belong on a pizza.

Back to the spinach, I have had spinach on a pizza. There is a restaurant called Silo that has fantastic pizza (and patty melts) and they do a great veggie pizza with zuchini, peppers, onions and what they call spinach souffle. It's awesome. I haven't been there in forever, since I don't work over there anymore. I'm going to have to splurge one day I think. It will blow my calorie count for a week, but it will be well worth it.

I did it! I tried something new! For lunch I had the Lean Cuisine Deep Dish Margherita Pizza and it was delish!

I know it's nothing exciting...but if you knew how often I tried something new, you'd be excited, too! :-)

OK, this isn't anything "new" necessarily but I'm so proud of myself that I've just gotta post it!

Last summer my main source of exercise was swimming laps in my back yard....I started with like 10 mins. non-stop and thought I'd die, and worked my way up to over 30 mins. non-stop. Today I swam laps for the first time since last September, due to weather, of course, and I swam 25 mins. non-stop!!! I'd planned on doing 15, but made it to 25....it's not new, but new since September and I'm stoked! I think I feel a blog coming on.... :-)

I was trying to think of something new I did today but all I could come up with was something I ate. I bought some sausages at Sam's Club, chicken sausages with mango. They actually had little chunks of mango in them. I grilled them up and thought they were delish.

My kids tried something new to them tonight too. I made each one try sauteed mushrooms (one bite each). Out of three kids only one liked them, but that is one more than I had anticipated!

Ooooh, a great thread! Mango is AWESOME, whether served in a daquiri or a margarita, or all by itself... LOL Tracy, try cooked spinach IN something..it's the only way I can eat it cooked. I had some in an omlette yesterday and it was delish...

Ooh salmon! I love that stuff; made a good salmon dish for myself a few nights ago. Fried a salmon fillet in canola oil and added some teriyaki sauce on it and some crushed pineapple. Very yummy!!!

I can only eat spinach two ways...raw in my salad mixed in with other greens....or I steam it and put it in my lasagna.

Well I am not a fish expert but I am a New Englander and my dad fishes for a living here on the east coast. So we dont eat anything but fresh fish and we New Englanders can tell the difference between fresh and frozen. :) If you need help with your fish let me know.

I love salmon...I usually marinate it with some olive oil, white wine, garlic and hot red crushed peppers (or hot sauce will do)...let sit in fridge and then when ready bake for about 20-30 minutes. I also sometimes make a cracker topping with wheat ritz crackers...so good.

Both spinach and goat cheese are at the BOTTOM of my list of things to try again. I can't get past the smell of cooked spinach, and that's all I can think about when even thinking about it raw. I've never had goat cheese. Apparently it has a good texture. Maybe I'll move it up a bit on the list.

I first tried Honey Mustard dressing a few years ago because they were out of my fave as well, and loved it. I actually preferred the fat free to the regular, even before the diet. I also buy honey mustard (not dressing) to put on sandwiches and stuff. Good with ham and turkey especially.

I've tried venturing out on new foods lately; tried hummus...like it better with crackers than veggies and honey mustard (lite) dressing. I've never liked mustard so was hesitant to try it until my school cafeteria was out of my faves. Damn, that stuff's better than sliced bread!

You know, I DID do something new today.

My friend called on his way home from work and wanted to know if I was coming over because he needed help with something on his computer. I had told him yesterday that I might stop by today, and also bring him some of the awesome pork chops I made yesterday, but I ended up not even getting out of my jammies, so I said no and didn't. That is a TOTAL first for me.

The old me, the one that always took care of others before she took care of herself would have jumped up, gotten dressed and gone over there, even though it wasn't urgent, just because he called.

The new me, although I did hesitate for a second, decided I didn't want to go out today and I said no. I told him if he wanted to eat (which I suspected was the real reason he was calling anyway), he was more than welcome to come over here and I would even heat them up for him and everything.

He didn't come over, which is fine by me. Why should I always be the one to go over there? I only live 2 blocks away now. He could easily have stopped by on his way home, if anything, just to see if I needed help with anything. Let him order a pizza or heat up some soup.

Liz, I liked it OK enough to eat again. Let me know how you manage to cut it up. It may have been my incredibe lack of coordination, but I had a difficult time.

Leeann, Fish is on my list of things to try. REAL fish of some kind. I ate too many frozen fish sticks growing up and hated them, so never even wanted to try fish (other than shrimp or canned tuna) when I escaped. But it's good for you, so...I have some Alaskan Cod Filets in my freezer, just haven't gotten around to it yet.

How was the salmon and what did you spread it on? What did you mix with it?

Tracy, I have a mango right now sitting in my fruit bowl so I can try. I was told to let it ripen (when it's redish color)...well I am still waiting. I might give up soon on waiting and just cut it open to try. I read that if you cut it up into chunks and then freeze it a little it makes a good dessert.

Can't wait to try it....maybe i'll try it tomorrow.

ok, so I think this is kind of silly, but it was a first for me so here goes.

I do not like my picture taken, Of course it's because of my perception of how I look. So I have always tried to avoid taking pictures. I have never been nor ever allowed anyone to get close to me with a video camera, NO WAY IN H**L!! Today, while we were down visiting my older kids, we did a video tape, mostly me and my son, but at one point, everybody even Tami, was in the video.

Awesome! You never know what you're going to like until you try it. Glad you had fun.

You learned something new, you had fun, you spent time with your family, plus it's good exercise for strength training on the arms and upper back/shoulders too. Quadruple the benefits all around.

What a cool challenge! Okay, here's my new thing for the day. I went to an archery shoot with my husband. Archery is his thing but I've never had the chance to go with him and complete a shoot until today. It was uncharacteristically cold (it even sleeted at one point) and we had my three kids with us (ages 6,6 and 8), but we all had a BLAST! And I held my own shooting too! Next shoot is in two weeks. Can't wait!

Today I ate a mango. The only way I've ever tasted mango before was in a margarita, lol.

It wasn't bad, and not as sweet as I expected. It was difficult to cut up. The fruit was soft and there is a big pit in the center. The fruit doesn't come away from the pit easily. I chilled it after cutting it because I prefer my fruit cold. I didn't peel it first and just ate the fruit up to the skin.

I will try one again, but next time I will chill the fruit first. It might make it a bit firmer and easier to cut up. If that doesn't work out well, then the next time I will peel it first and then cut the fruit from the pit and just freeze it and use it in a smoothie or something.

They won't be on the list of my favorite fruits, but they will be in the shopping cart periodically for a change of taste.

Part of our new lifestyle involves eating or doing things that we've never done before. That's probably why we were unhealthy to begin with.

I myself am a picky eater. Fruits and veggies especially. There are things I don't like, and things I've never had because I just never bothered to try. I've also found that there are things I used to not like, but eat now. Some that I actually like now and some I just tolerate. Growing up, I ate what my mother cooked. She wasn't very adventurous, and she didn't like certain things, so she never cooked them. I was pretty much the same way. But all of that is changing.

In order to keep things interesting, it's important that we change or expand our old habits to include healthier ones. It's also about bettering ourselves.

So this is an ongoing daily challenge to try something new every day. It doesn't have to be food. Whether it be for mind, body, or soul, just something you have never done before.

Don't like brussels sprouts or asparagus? Try putting a sauce, other topping or different seasoning on them. Lowfat cheese or lemon pepper for instance. Spinach? Mushrooms? Chop it up and add it to a soup, or sneak some onto a sandwich or in a salad. Try baking your own bread or making your own applesauce.

An exercise or activity that you've never done before. Maybe because you didn't think you could. Try it now. Anything from giving a Hula-Hoop a whirl to climbing a rock wall.

Hard core rocker? Warm weather is coming, and with it, many free outdoor concerts. Community bands or orchestras for instance. Attend a symphony performace or even an opera. Switch out a fiction novel for non-fiction. Or write one. Read a manual, or instructional book. Origami or an auto repair manual. Or the Bible.

Strike up a conversation with someone you see often, but have never spoken to. Go roller-blading. Watch a documentary on anthills.

This whole journey is filled with challenges. But it's the challenges we make for ourselves that result in bettering ourselves that are most rewarding.

You don't have to like it, or ever do it again. Just try it. Eat it. Do it. Be it.

Challenge yourself. Push yourself. Enrich yourself.

And then come back here and tell us what you did, and whether you liked it or not. How you did it, or what you would change if you did it again. Small or big, it doesn't matter. If you did it, and have never done it before, post it here.
