I think she says it perfectly about the importance of water.

‘The fountain of youth is a water fountain. If you want every organ inside you to work properly, you need water. If you want your kidneys, which even in healthy people lose function over time, to last throughout your life, you need water. If you want great skin, bright eyes, and the stamina to make it through the class at the gym with all those twenty-something’s who don’t think you can do it, you need water.

‘Every chemical reaction in your body requires a water molecule. Without water your cells go on strike like uncompensated workers. Well-hydrated people have even been shown to handle stress better. In order to get the standard six to eight glasses a day, you need to be drinking a little all day long. You’ll need extra if it’s hot (that includes hot weather, hot saunas, and hot yoga), or if you exercise, fly in planes, or ingest caffeine, alcohol, or salty foods. If you’re thirsty, you’re already on the road to dehydration; drink first. Water is best served hot, warm, or cool but not iced. Icy beverages stifle what Ayurveda calls the “digestive fire,” and restoring youthfulness calls for good digestion.

‘What does count as water is water, mineral water (still or fizzy), seltzer (preferable to club soda, which has a fairly high sodium content), and caffeine-free herbal teas. Juice counts as water, but fruit juice has enough sugar that you may want to cut it by half with still or sparkling water. One surprising source of pure water you don’t even have to drink: you can eat it. Fresh, juicy fruits, as well as salads and crudités, are full of water, with vitamins, minerals, phytochemicals, and great taste to boot. An apple is 66 percent water, raw cauliflower 82 percent, cantaloupe or uncooked spinach 84 percent. people who eat very high quantities of salad and fresh fruit can drink substantially less water than other folks because they’re getting so much of it in their diet. Choose pure water or real juice over any drink containing refined sugar or high-fructose corn syrup. Even for those past the age of innocence, this is a case in which purity is called for.’
