It would be nice to see this article updated to include the current research that debunks the avoidance of fats shown here, but instead focuses on getting critical nutrients from food choices. Healthy bodies need vitamin B12 and iron in abundance - and there often isn't enough in the "lean" protein choices. A reasonable amount of red meat, dark poultry meat, and fatty fish should be encouraged - and a lot of these favourites work well with them. By all means choose leaner cuts of beef for burgers and meatloaf (since they are higher in nutrients), but dark meat chicken or turkey work great for noodle soup and home-made tenders / nuggets (even better than white meat - and more nutrition).
A mix of different root vegetable "fries" is a great suggestion - with rutabaga, turnips, radishes, parsnips, jicama, sweet potato, and even slices of kohlrabi or broccoli stems fitting in great. Instead of sugary ketchup, a dip based on either Greek yogurt or avocado can add both nutrition and flavour.

You would think that living in rural Guatemala would mean that the kids meal options would be whole foods like the adults but they're all the same over processed foods. My 7 year old has decided that she's DONE with kids meals because they're all boring. She wants what mom has, stewed meat with rice and vegetables and some tortillas. We still eat too many carbs to be skinny but we're happy. lol

So yes!! I use my food processor to beat the daylights out of them. Now in 2 eggs I'll put in 4 servings of veggies!! I love smoothies,,,hmm no green stuff, but now I'm eating much better!!
