A gluten sensitivity question?

I love bread and as you can see from this picture, I bake all my own and this is a weeks bread baking.

Now, over the years I've had a digestive problem that comes and goes and when it's bad I have a lot of gas, upper abdominal gas and belching that goes on all night sometimes with great volumes of air. It's painful and I've been in emergency more than once and they tell me it's esophagus spasms and reflux.

Many people, not my doctors though, have told me to try and go gluten free and I've always been reluctant to do so, as I REALLY love bread.

So, for one week I've given up bread, but kept my calorie range the same by using quinoa and brown rice for my starch.

This morning when I stepped on the scale I was down to 106.5 from 108.5 a week ago.. Do you think this weight drop could be do to very little gluten.

I don't feel any increased benefit yet though and still am getting gassey at times..

Any insight would be appreciated.

    Absolutely, the weight change could be from reducing gluten. If you are gluten sensitive, your gut has been compromised, and you would do well to reduce all lectins and phyto-nutrients as well... discontinue legumes, all cereal grains (anything with bran... like brown rice... white rice is fine), peanuts, corn.     ...BTW, your bread is lovely... I, too, love baking bread. Unfortunately, discovering my own healing through eliminating gluten leaves me having to give that up for now. I hope somewhere down the road I can go back to baking bread according to the recommendations of Weston A. Price.

    If you find the idea of giving up the bread entirely right off offensive, consider baking sourdough bread (make your own starter), and use spelt, instead of wheat flour. You may find a much decreased senstivity.

    OH yea for sure!!! big time and it can take up to 6 wks to really feel a diff. if you are only sensitive. My naturopath said 6 months would get me totally well. I do so much better gf, no bloating, not as much gas, but i eat a lot of broc. and caulif. so that doesn't help. I feel so much better. I will not go back to gluten, may add a bit of sugar to my diet slowly but not refined, right now she has me at no gluten,sugar or dairy and I feel good inside wise, my arthritis pain is slowly getting better but now if you have read my last 2 blogs I am having to stop and do the reg. route cos my long term insurance doesn't recognize naturopaths........................ sigh they want you well on their terms which is sitlly as their ultimate goal sis for them to not have to pay you andg et you back to work.
    Oh well going to bed so not getitng upset now LOL

    Absolutely! I'm gluten sensitive and I've witnessed a roller coaster ride affect with my weight - depending on bread and other gluten products. I eat breads, cereals, and other gluten based products and I gain weight (just gained back all 3 pounds I lost over the week) and then I give it up and lose the weight quickly again.

    It's also amazing how you feel without gluten. Keep to it and see if you continue to have a change. Each person is different but, overall, it makes a huge difference.
