A gluten sensitivity question?

I love bread and as you can see from this picture, I bake all my own and this is a weeks bread baking.
Now, over the years I've had a digestive problem that comes and goes and when it's bad I have a lot of gas, upper abdominal gas and belching that goes on all night sometimes with great volumes of air. It's painful and I've been in emergency more than once and they tell me it's esophagus spasms and reflux.
Many people, not my doctors though, have told me to try and go gluten free and I've always been reluctant to do so, as I REALLY love bread.
So, for one week I've given up bread, but kept my calorie range the same by using quinoa and brown rice for my starch.
This morning when I stepped on the scale I was down to 106.5 from 108.5 a week ago.. Do you think this weight drop could be do to very little gluten.
I don't feel any increased benefit yet though and still am getting gassey at times..
Any insight would be appreciated.
