The Peanut Butter "Fix" -- Thank you, Hungry Girl!

As one of those people who has been known to mainline spoonfuls of peanut butter directly from the jar -- not as often these days, but sometimes -- I was intrigued by a recipe in a yesterday's Hungry Girl newsletter:

Peanut Butter Oatcake in a Mug!


(FYI, she provides the WW point count as well as nutritional information.)

I made this yesterday for lunch, and found it filling and satisfying. (I substituted chocolate peanut butter powder for the regular, and may add an extra sweetener next time. I'm thinking it would also be good topped with berries, kind of like a PB&J.)

    I LOVE PB! I spread 1 Tablespoon on two pieces of toast topped with apple slices for breakfast this morning. YUM! Funny how the assumption is (like in this recipe) that eveeryone in the US owns a microwave. The recipe sounds good, though I don't do "no-calorie sweeteners" (an oxymoron if I've ever heard one lol). I agree with WATERMELLEN that the recipe can be easily altered.

    BTW, if you have Kroger's, I've discovered a great low-calorie, healthy bread -- a Simple Truth Organic brand, in the frozen food section: Sprouted Seeded Thin sliced Bread, 70 claories per slice.

    Wow - this sounds wonderful. I've bookmkarked the recipe and will try it. yum yum.

    And thank you for the bloglove on my latest post. I am grateful it was a small tumble - a day of rest and some advil and I'm pretty much all fixed. took of the band-aids last night. This particular fall, though, gave me real pause for thought about hiring help in the future.

    Recipe sounds great!! I no longer have PB powder -- had bought it and just didn't like it.

    But: I'm betting this would work (with a tweak or two) with regular PB as well!!

    I have to be soooo careful with PB, it's a trigger for me. The recipe sounds great, though!
