It’s so easy to get swept up, distracted, off course. We got to remember to put ourself back in the right direction. I built this simple stack of my fav books, I call it my nutrition altar. I have this altar, in plan sight, to inspire me to create healthy meal plans and to dive back into cooking! I find I am more successful when I read the recipe, allow myself to imagine, figure out the ingredients, all this takes time to process! Lol! You never want to rush learning about nutrition, it’s OK to always be a beginner, with every meal, keeps the mindset positive.
Tonight I’m making an old favorite, Curried Lentil Soup W/Mango Chutney.
Soup - I use regular chicken stock
Mango Chutney - I cut the sugar to 1/2 cup, added Mirin
