My favorite right now is Brussel sprouts! Still loving the cole slaw bowl though it can be a bit... pungent.

Just cut in half (or in quarters if it is a big one) toss in olive oil (not too much!) with salt and pepper. Place in a pan at 375 for 23-25 minutes. Some of the parts will be browned, some won't. I love the browned parts the best!! I do this with asparagus and green beans as well, YUM!

One of my favorite new recipes is the Cole Slaw Bowl.

Get some cole slaw mix, whatever kind you like and add some hummus and salsa and mix. Throw in some olives and some avocado, and voila! It tastes like a vegetarian taco bowl, and is oh so yummy!

I have no luck with avocados so I tried guacamole verde in it instead and skipped the salsa (the verde is more like a salsa dip not a creamy as regular guacamole) and I love it. So much easier!

A good sub for spaghetti is spaghetti squash. Cut squash in half and place in glass baking dish with a LITTLE water. Bake at 350 for about 1/2 hour or until tender. Let cool until you can handle. Scoop out the insides with a spoon and toss to separate. Once you have the sauce on it you can't tell the difference!! It has very little taste of it's own. I love it! It's much lower in calories too ; )

Russian Chicken

1 small bottle RED Russian Salad dressing----don't use the orange one!
1 envelope dried onion soup mix
1 small jar sugar free orange marmalade
Boneless/skinless chicken of your choice. I use tenders

Mix the three ingredients together and pour over the chicken pieces. Bake 1 hour at 350.

One of my favorite new snacks! Baked squash (can do zucchini too)

2 yellow squash cut long ways (into spears)
line them up on a pan and sprinkle with:
a dash of olive oil
salt and pepper to taste
and a pinch of cayenne pepper flakes

Bake at 350 for 20-30 minutes
or at 400 if you want them a little crispy (I love them crispy!)

Black Bean Butternut Squash Chili

1 Tbsp. oil
1-2 cups chopped onion
2 Tbsp. chili powder
4 c butternut squash, peeled and cubed
1 jar Black Bean Corn Salsa
garlic powder
1 can can vegetarian refried beans
1 can black beans, rinsed and drained
1 can can diced tomatoes
2 cups veggie broth


Heat oil in large skillet over medium-high heat. Sauté onions until they begin to soften. Add chili powder and butternut squash; cook and stir 2 minutes. Pour into 4-5 quart greased slow cooker. Add Salsa, garlic powder, refried black beans, black beans, tomatoes and broth; mix well. Cook on low 6-8 hours or until squash is tender. Serves 8.

With no oil I thought they might stick, but no, they turned out emoticon

I did add 1/2 serving of chopped natural almonds and a dash of cinnamon. Topped them with syrup w/ a chopped banana and another dash of cinnamon in it.

Recipe for Week 1- Fall BINGO Challenge:

Grits with eggs and spinach

I changed this up just a tad.
I added just a smidge of chopped fresh tomato after the spinach was cooked, and stirred together.
Used shredded mozzarella cheese. Shredded it over grit mixture and stirred just to melt a bit.
I made the eggs over medium, put them on top of the grits! YUM!
My husband even liked it!
I will definitely be making this one again! =)
